Shana

Shana is an unapologetic student of food. Dating back to childhood, she recalls her father and grandmother slaying Puerto Rican dishes, creating immersive all five senses experience in the kitchen at ‘El Gato Negro’ - Shana’s grandmother’s restaurant on Seneca Street that took on a “deli by day / speakeasy by night” identity.

It wasn’t until a little later in life that her own culinary curiosity took shape on her quest to design fueling, nutrition based dishes that actually taste good. From that became “Built Without Guilt” a successful meal prep program featuring mouthwatering dishes that fit into any meal program or dietary plan.

The encouraging remembrance of her father coupled with her new commercial kitchen at Chandler Street market has created a blank canvas for her innovative mind and medium to teach and share her passion with others - encouraging everyone to not be afraid of new!

Her cooking style is adventurous. Always staying ahead of the trend in testing infused dishes and never shying away from using ingredients in non-traditional ways - evidenced by her ever popular lion’s mane mushroom meatless crab cakes. She’s always down for a collaboration to broaden her skillset with new flavors and cuisines but finds much of her inspiration from browsing the aisles of Trader Joe’s (usually in search of her latest obsession, their red Argentinian shrimp) or simply trolling the internet for new ideas!
